Menu Plan Monday ??

I am so behind this week, I haven't figured out the menu plan for the week-
Today I did the BBQ CrockPot Pork from last weeks menu (I didn't get around to it last week)
I think tomorrow I will do the chicken and brown rice CrockPot that I didn't get to last week.

More later when I get the menu up and running!

Menu Plan Monday #3

Last week I ended up changing the menu a bit, as I remembered I have so much in the freezer that I need to use (the freezer needs to be defrosted). So this week all of the dinner items start with something I have in the freezer or in the cupboards.
Adam is working on Sunday, So an easy dinner is a must for that evening.

Menu Plan Monday

Here is what we will be eating this week:
If you have any suggestions for fast tasty breakfasts, let me know. I am having a brain block of things that are fast and somewhat healthy so we are having the same things as last week.

Here is the recipe for the muffins I will make this week:

Chocolate-Chocolate Chip Muffins
Yield: 24 muffins
Source: 101 Things to do with a Cake Mix

1 chocolate-fudge cake mix
1 small box chocolate instant pudding
3/4 c water
3 eggs, beaten
1/4 c applesauce
1/4 c vegetable oil
1/4 t almond or vanilla extract
3/4 c chocolate chips, frozen
Muffin papers

Grease and flour muffin pan or use paper muffin cups. mix together
cake mix, pudding, water, eggs, applesauce, oil and extract until
smooth.

Stir in chocolate chips last. Fill cups 3/4 full.

Bake about 23-33 minutes, or until done when tested with a toothpick.

Eggs a la Goldenrod

I realized tonight as we were dying eggs


that I have neglected to include a HUGE family tradition in my weekly menu! We will NOT be having cold cereal for breakfast tomorrow (as previously posted on the menu) instead we will be having :

Eggs a la Goldenrod

Basically this is a cream sauce with the whites of the hard boiled eggs cut up into it, this is poured over slices of toast(or toast cups if you are feeling adventurous) and topped with the yolks which have been grated.

I don't know of any other family that eats this, but my mom has been making this every Easter that I can remember. I think the best part is that the "whites" of the eggs are not so white anymore, after going through the dying process with young kids. You've got to love technicolored food!

FYI- Xander couldn't get enough and kept asking to dye more eggs, even though he will later refuse to eat them.

Imogene dyed most of her eggs in pink, when she was forced to give it up, she only wanted the other "girlie" colors: purple and red

MiMi was supposed to be sleeping, but spent most of the time crying, as it was past bed time and she was not at home (she was much happier during dinner, when she managed to get popsicle and pink frosting into her ponytail, causing it to stand straight up)

This is the first week that I have written out every breakfast, lunch, dinner and snack. The kids have loved having a dinner menu, so I'm hoping they will like being able to plan on what they will eat at other times too.
